Shrimp Lettuce Cups

Happy Thursday!

I wanted to share a quick and healthy recipe that I was inspired and picked up from Hey Claire. She showed a great way to eat clean and keep it tasty. I went with a slightly different approach by adding a few more veggies and making a dressing besides just lemon juice. Either way it tastes really good and don't need to think too hard on how to make it because it is super easy! Trust me! :) 

Ingredients:

1/2 pound of small shrimp (thawed & cleaned)
4 small radishes (thinly sliced)
10 mini heirloom tomatoes (diced)
1 avocado (diced into desired size)
Head of butter lettuce (washed and dried)

Dressing:

2-3 lemons (squeezed for juice)
1/2 piece of shallot (minced)
S+P

Mix well together and set aside.


Cook the whole shrimps with a little bit of olive oil and sprinkled some garlic powder plus S+P. They will cook pretty fast and so once they turn pink all around, they're done. You definitely don't want to overcook them or else they will be rubbery tasting (gross!). Set aside once you're done. 


Have all the veggies prepped and chopped up into individual bowls. This is a great build-as-you-eat type of food and nice way to add however much you like or don't like. :)


There you have it! Super easy right? And I don't feel so bad eating it so right after I can have some ice cream! That's a balance right? hehehe..

  6. My husband would love this...I think. He's allergic to some shell fish but not all. I think he can eat shrimp but I guess I better find out before I make this for him. lol. Looks yummy!
